I give this 5 stars with a caveat. This is more of a sharpening (removing metal) tool than a hone which straightens the cutting edge. The diamond coating is mildly aggressive at removing metal without GRINDING your edge away. Here’s the thing, if you have knives that are seriously dull or the cutting edge is chipped then this is not the tool you need. You’ll need to do some heavy grinding to fix that. Or just chuck the old set and start over. But, if you have knives in fairly decent shape that need a little tuning up then this perfect for the job. A few swipes at a 20 degree angle and you’ll find your previously semi-dull knife slices through meat and veggies like a dream. If your looking for a scalpel edge this won’t get you there but not what it’s intended for. Sharpening knives is easy once you get the technique down.If your a novice at sharpening knives watch a couple of videos on YouTube on how to use a hone and you’ll love this sharpener/hone. The same princpals apply. Once you get it down you’ll be sharpening every knife you own. One tool to improve all the knives you own seems like a good purchase to me so it gets 5 stars and well deserved. For those who are more technical, the diamond chips leave a microscopic serrated edge which is great for food but catches when doing the paper test.
